Refined sans sugar and sans gluten granola cups made with oats, chia seeds, and nuts and finished off with your preferred vanilla yogurt, berries, lemon zing and a dash of nectar. A simple and exquisite breakfast reward ideal for informal breakfast or anytime!

Yogurt, berries, and granola are one of my preferred blends. I have it continually for breakfast or an evening nibble. It's the ideal blend of sweet, rich, and crunchy that I simply love!

A weekend ago, one of our companions had us and a couple of companions over for informal breakfast where everybody brought over a dish. I realized I needed to bring something that fused my preferred treat.

Simply bringing a thing of yogurt and berries appeared to basic. I chose to take it up a score and make it more rich and fascinating. I made granola cups that appear as though charming smaller than normal tart shells. At that point I filled them with my preferred yogurt and finished off them with berries, lemon zing, and nectar.

Ingredients :

Granola Cups

  • 1/4 cup coconut sugar
  • 2 tablespoons maple
  • 4 tablespoons coconut oil
  • 1 1/2 cup old fashioned oats
  • 1/4 cup pecans chopped**
  • 1/4 cup walnuts chopped
  • 1/2 cup almonds chopped
  • 1 tablespoon chia seeds
  • 1 egg white
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • Salt

Toppings

  • 2 cup vanilla yogurt or favorite flavor
  • Zest of one lemon
  • Berries
  • Honey for drizzling

Instructions :

  1. Pre-heat the oven to 350 degrees. Grease a 12 cavity muffin pan.
  2. For the cups, melt the coconut oil. Stir in the coconut sugar and maple and mix until sugar is dissolved. Mix in the remaining ingredients.
  3. Divide the granola mixture between the greased muffin cavities. Use a spoon to press the mixture into each muffin cavity, making sure the sides are fully covered and there is a small hole/indent in the middle so it forms a cup.
  4. Bake for 15-18 minutes, or until golden brown. Allow to cools slightly then remove from muffin pan. Allow to cool completely.
  5. Fill each granola cup with yogurt, berries, lemon zest, and honey.
  6. Serve and enjoy!
