This veggie lover twofold chocolate chia mousse is made with straightforward and negligible fixings yet is definitely not fundamental. It's essentially similar to chocolate paradise in a container. It's likewise totally without dairy, made with coconut milk for a smooth mousse that anybody can appreciate!

INGREDIENTS

  • 1/4 cup chia seeds
  • 1 can full-fat coconut milk (approx 400ml)
  • 1/2 cup 70% dark chocolate chips (or 90 grams of dark chocolate)
  • 1/4 cup cocoa powder
  • 4 pitted medjool dates
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • pinch of salt

INSTRUCTIONS

  1. Mix the chia seeds and coconut milk together in a bowl. Set aside
  2. Melt the dark chocolate using a double boiler method or in the microwave. Add the chia pudding mixture and mix together.
  3. Add the chia mixture to a high-speed blender with the rest of the ingredients and blend until smooth and creamy.
  4. Transfer the mousse into small cups and place in the fridge to firm up, for at least an hour or overnight.
