A sound wild rice soup formula made with butternut squash, kale and white beans. This Slow Cooker Wild Rice Vegetable Soup is a veggie lover and vegetarian simmering pot soup formula.

I love each and every formula that I share here on Kristine's Kitchen, however there are a not many that I simply realize I'm going to make over and over. Which isn't a simple comment as a nourishment blogger who is continually trying out new plans. Now and then I don't get the opportunity to make old top picks as frequently as I'd like.

As anyone might expect, a large number of my preferred plans are simple moderate cooker plans. I initially shared this soup formula in 2017 and it has become such a most loved with my family and with perusers that I'm refreshing this post with new tips and resharing it today.

Ingredients :

  • 1 medium onion chopped
  • 1 cup wild rice or wild rice blend (uncooked) the cook time listed on the package should be about 45 minutes, rinsed and drained
  • 1 medium butternut squash peeled, seeded and cut into ¾-inch pieces (about 4 cups)
  • 15 ounce can white beans I used cannellini, rinsed and drained
  • 4 ribs celery chopped
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 bay leaf
  • 6 cups low sodium vegetable broth
  • 6 cups chopped kale or fresh spinach, optional

Instructions :

  1. Add all ingredients to the slow cooker except for the broth and kale.
  2. Pour the broth into the slow cooker, and gently stir to combine.
  3. Cook on low setting for about 6 hours, or on high setting for about 3 ½ hours, until the rice is cooked and tender. As all slow cookers vary, cooking time may be different in your slow cooker compared to mine. Near the end of the cook time, check to see if the rice is done. Once the rice is tender, the soup has cooked long enough.
  4. Remove the bay leaf.
  5. Stir kale into soup. Serve.
